Ingredients
- 8 cups zucchini
- 2/3 cup lemon juice
- 1 cup sugar
- 1/4 tsp nutmeg
- 1 tsp cinnamon
- 4 cups flour
- 2 cups sugar
- 1/2 tsp salt
- 1/2 tsp baking soda
- 3 sticks margarine or butter softened

Instructions
- Peel, seed, and cut zucchini into small pieces. Cook in 2/3 cup lemon juice until tender. Add 1 cup sugar, 1/4 teaspoon nutmeg, and 1 teaspoon cinnamon. Simmer for one minute. Add 1 cup crust mixture to thicken.
- Mix flour, sugar, salt, baking soda, and margarine or butter until crumbly and sticky. Pat half of the crust mixture in to bottom of 9x13-inch glass baking dish. Pour cooked filling mixture on top. Spread evenly. Pat remaining crust mixture on top of the zucchini mixture. Bake at 350 degrees for 35–40 minutes.
