Ingredients
- 1 Tbsp vegetable oil
- 1/2 cup onion chopped
- 1 small potato peeled and diced
- 1 carrot peeled and sliced
- 2 cups chopped broccoli
- 1 14.5 oz can chicken broth
- 1 tsp dried thyme
- 1/4 tsp salt
- 1/8 tsp ground black pepper

Instructions
- Place oil in a saucepan over medium heat.
- Add chopped onion and sauté until translucent but not browned.
- Add remaining vegetable ingredients and combine.
- Add broth and bring to a boil. Reduce heat; add thyme, salt, and pepper, and simmer until vegetables are tender.
