Vegetable Medley
This recipe is very easy to make and is so delicious. It is also a pretty side dish that goes with any kind of meat, and it’s a great way to use up any extra cucumbers.

Vegetable Blend

pickling salt

Cucumbers
sliced and unpeeled

onion
chopped

green pepper
chopped

red pepper

Marinade/Sauce

cups
sugar

cup
vinegar
1
tsp
celery seed
3/4
tsp
pickling spice

tsp
celery seed

tsp
pickling spice
Instructions
Vegetable Blend
Sprinkle pickling salt over vegetables and let set for 2 hours, drain well.
Marinade/Sauce
Mix sugar, vinegar, celery seed, and pickling spice together well.
Pour over drained vegetable mixture. Store in a glass jar in the refrigerator.
