This sauce recipe will almost fill a Nesco roaster and leave room for stirring. The sauce can be frozen—I fill different size containers to use at a later date if I’m not making the entire 35–40 pounds of ground
chuck. I have had lots of good comments on this sloppy joe sauce.

Ingredients
- 10 cups finely chopped onion approx. 13 large onions
- 4–5 bunches of celery finely chopped
- 6 heads of garlic finely chopped
- 5 cups apple cider vinegar
- 6 cups sugar
- 4 Tbsp salt
- 300 oz tomato soup
- 10 lemons juiced
- 3–4 Tbsp ground cinnamon
- 3–4 Tbsp ground cloves
- 35–40 lbs ground chuck

Instructions
- Combine first six ingredients into a Nesco cooker and cook for an hour, stirring frequently. Add tomato soup and lemon juice. Cook on LOW for 2 more hours, stirring frequently.
- After the 2 hours, combine cinnamon and cloves in a small bowl with some of the sauce, and blend to make a thin paste. Add this paste to the sauce and stir to combine. Let sit for 30 minutes.
- Brown ground chuck and add enough sauce to cover. Keep on medium–low heat just long enough to blend the flavors, then combine meat/sauce mixture with remaining sauce in the Nesco, stir, and serve.
