Ingredients
- 1 can beef broth
- 1 cup chopped onions
- 2 small sweet potatoes peeled, halved lengthwise, and cut crosswise1/2-inch thick slices
- 2 medium parsnips peeled and diced
- 8 oz baby carrots
- 2 lbs short ribs
- 1/4 tsp pepper
- 3 sprigs fresh dill
- 1 14 1/2 oz can diced tomatoes in uice

Instructions
- Mix beef broth, onions, sweet potatoes, parsnips, and carrots in a large slow cooker.
- Top with short ribs, pepper, dill, and tomatoes.
- Cover and cook on low 7–9 hours until ribs are very tender.
