- 2 Tbsp rice vinegar
- 1 Tbsp sesame oil
- 1/2 tsp coconut aminos or pure maple syrup optional
- 1/8 tsp curry powder
- 1/4 tsp garlic powder or 1/2minced garlic
- 1/8 tsp sea salt
- black pepper to taste
- 1 large English cucumber thinly sliced
- 2 Tbsp cilantro leaves chopped
- 1/4 cup chopped peanuts or 1 tsp sesame seeds
- Crushed red chili flakes optional

- In a medium bowl, whisk together the rice vinegar, sesame oil, coconut aminos (or pure maple syrup), if using, curry powder, garlic powder, sea salt, and black pepper, to taste. Add the sliced cucumber and chopped cilantro, tossing to coat. Garnish with chopped peanuts or toasted sesame seeds and optional red chili flakes.
