Roasted Cauliflower
This is in response to a reader’s request for cauliflower recipes, an under-rated and often misunderstood veggie.

  1. In a bowl, stir together the butter, red bell pepper, and spices. Blanch the florets in boiling water for 2 minutes; drain and toss the florets and butter mixture together. Add the breadcrumbs and toss to coat.
  2. Place cauliflower on a baking sheet or shallow baking dish and bake at 425 degrees for 15 minutes or until nicely browned.
