Ingredients

- 1 cup flour
- 1/3 cup powdered sugar
- 1/3 cup butter
FILLING
- 1 cup sugar
- 1/4 cup flour
- 2 eggs lightly beaten
- 1 tsp vanilla
- 3 cups finely chopped fresh rhubarb

Instructions
CRUST
- Combine the flour and sugar. Cut the butter into the flour/sugar mixture until it resembles coarse crumbs.
- Press into the bottom of a greased 11-x7-x2-inch baking pan. Bake at 350 degrees for 12 minutes.
FILLING
- Combine sugar, flour, eggs, and vanilla. Stir in rhubarb and pour over warm crust.
- Bake at 350 degrees for approx. 35-40 minutes or until wooden toothpick comes out clean. Serve warm, if desired. Store in refrigerator.
