Rhubarb Cheesecake Dessert
  1. Preheat oven to 375 degrees.
  2. In a bowl, combine flour, brown sugar, and salt; cut in butter until mixture resembles coarse crumbs. Stir in walnuts and vanilla. Press into a greased 13×9-inch baking dish.
  3. Bake for 10 minutes, cool slightly. In a mixing bowl, beat cream cheese and sugar until light and fluffy.
  4. Add eggs and vanilla; mix well.
  5. Pour over crust.
  6. Bake for 20–25 minutes or until center is set and edges are light brown; cool.
  7. In a saucepan, combine rhubarb, sugar, water, cornstarch, and cinnamon; stir until thickened, approx. 5 minutes.
  8. Cool. Pour over filling.
  9. Chill at least 1 hour.
