  1. Combine cucumber, onion, and green pepper slices in a bowl, add salt and ice water to cover. Let stand two hours, then drain.
  2. In a non-reactive saucepan (stainless or enamel, not raw aluminum), mix sugar, the vinegars, peppercorns, celery seed, and parsley flakes, and bring to a boil.
  3. Pour over cucumber mixture. Refrigerate. Keeps well.
Recipe Notes

NOTE: to add color to recipe, use red onion and/or orange or red bell pepper.
