Ingredients
- 3 medium cucumbers sliced
- 1 onion sliced
- 1 green pepper sliced
- 1/4 cup salt
- Ice water
- 2 cups sugar
- 1/2 cup white vinegar
- 1/2 cup dark vinegar
- 1/2 tsp peppercorns
- 1 tsp celery seed
- 1 tsp parsley flakes

Instructions
- Combine cucumber, onion, and green pepper slices in a bowl, add salt and ice water to cover. Let stand two hours, then drain.
- In a non-reactive saucepan (stainless or enamel, not raw aluminum), mix sugar, the vinegars, peppercorns, celery seed, and parsley flakes, and bring to a boil.
- Pour over cucumber mixture. Refrigerate. Keeps well.
Recipe Notes
NOTE: to add color to recipe, use red onion and/or orange or red bell pepper.
