- 8 cups Pumpkin peeled and cubed
- 2-1/2 cups white vinegar
- 2-1/2 cups sugar
- 4 sticks cinnamon
- 1 tsp pickling spices
- 1 tsp cloves

Instructions
- Steam bite-sized pumpkin cubes over (not in) boiling water until tender.
- In a separate pan, combine vinegar, sugar, cinnamon, spices, and cloves; bring to a rolling boil.
- Reduce heat and simmer for 10 minutes.
- Add in steamed pumpkin cubes and simmer for an additional 5 minutes.
- Pack into hot sterilized jars.
- Seal and process in a boiling water-bath for 5 minutes.
