  1. Combine eggs, onion, flour, baking powder, salt, and half of the potatoes in a blender; cover and process until smooth. Add remaining potatoes, cover, and process 2 cycles. Pour onto a hot, well-greased griddle. Cook on each side until brown and crisp.
