Ingredients
- 2 eggs
- 2 Tbsp milk
- 2 Tbsp melted shortening
- 2 Tbsp flour
- 3/4 tsp salt
- 1/8 tsp pepper
- 1/4 small onion chopped fine
- 2 cups raw potatoes peeled and diced

Instructions
- In a blender, mix the first 7 ingredients and 1 cup potatoes for 5 seconds. Add remaining cup of potatoes. Mix 8 seconds or until coarsely chopped.
- For each pancake, pour 1/4 cup mixture into hot, greased griddle, and brown on both sides.
- Makes 8 pancakes. Serve with syrup or applesauce.
