- 1 cup flour
- 2 tsp salt
- 2 tsp baking powder
- 1/8 tsp white pepper
- 2 eggs beaten
- 1 cup milk
- 4 Tbsp melted butter
- 2 Tbsp grated onion
- 3 cups grated raw potato
- Maple syrup or applesauce optional

Instructions
- Grate potatoes just before using to prevent discoloring. Combine all ingredients and drop by the spoonful, spreading out, and fry until brown on both sides, about 3 minutes. Serve with syrup or applesauce.
