Potato Pancakes
  1. In a blender, mix eggs, milk, shortening, flour, salt, pepper, onion, and 1 cup potatoes.
  2. Add remaining 1 cup potatoes and mix for 8 seconds, until coarsely chopped.
  3. For each pancake, pour 1/4 cup mixture onto hot, greased griddle; brown on both sides.
  4. Makes 8 pancakes.
  5. Serve with syrup or applesauce.
