Ingredients
- 2 eggs
- 2 Tbsp milk
- 2 Tbsp shortening melted
- 2 Tbsp flour
- 3/4 tsp salt
- 1/8 tsp pepper
- 1/4 small onion finely chopped
- 2 cups raw potatoes peeled and diced, divided

Instructions
- In a blender, mix eggs, milk, shortening, flour, salt, pepper, onion, and 1 cup potatoes.
- Add remaining 1 cup potatoes and mix for 8 seconds, until coarsely chopped.
- For each pancake, pour 1/4 cup mixture onto hot, greased griddle; brown on both sides.
- Makes 8 pancakes.
- Serve with syrup or applesauce.
