Pineapple Custard
  1. Preheat oven to 400 degrees.
  2. Blend 1/3 cup sugar with cornstarch and add crushed pineapple with juice.
  3. Cook, stirring constantly, until the mixture is thick and clear; cool and set aside.
  4. Blend cream cheese, softened at room temperature, with remaining 1/2 cup sugar and salt.
  5. Add eggs, one at a time and stir well after each egg is added.
  6. Blend in milk and vanilla.
  7. Spread cooled pineapple mixture over the bottom of the pastry shell.
  8. Pour in cream cheese mixture and sprinkle with chopped pecans.
  9. Bake in oven for 10 minutes, then reduce heat to 325 degrees and bake for 50 minutes.
  10. Cool and hide it from the family!
