Ingredients
- 1 cup sugar split
- 1 Tbsp cornstarch
- 1 can crushed pineapple 9 oz
- 8 oz cream cheese softened
- 1/3 cup plus 1/2 cup sugar
- 1 tsp salt
- 2 eggs
- 1/2 cup milk
- 1/2 tsp vanilla
- 1 unbaked pastry shell 9-inch
- 1/4 cup chopped pecans

Instructions
- Preheat oven to 400 degrees.
- Blend 1/3 cup sugar with cornstarch and add crushed pineapple with juice.
- Cook, stirring constantly, until the mixture is thick and clear; cool and set aside.
- Blend cream cheese, softened at room temperature, with remaining 1/2 cup sugar and salt.
- Add eggs, one at a time and stir well after each egg is added.
- Blend in milk and vanilla.
- Spread cooled pineapple mixture over the bottom of the pastry shell.
- Pour in cream cheese mixture and sprinkle with chopped pecans.
- Bake in oven for 10 minutes, then reduce heat to 325 degrees and bake for 50 minutes.
- Cool and hide it from the family!
