Instructions
  1. In a large crock or kettle, layer the vegetables and salt. Weigh it down and let stand in refrigerator for 6 hours.
  2. Drain vegetables, rinse, and drain again.
  3. Put remaining ingredients in a large kettle and bring to a boil. Simmer for 12 minutes, then add the vegetables and simmer 5 more minutes; remove from heat.
  4. Place into hot, sterilized jars and seal.
