Ingredients
- 1 lb Italian turkey sausage cut into 1-inch pieces
- 1 medium eggplant cut into 1/2-inch cubes
- 4 cups prepared chunky vegetable spaghetti sauce
- 12 oz penne pasta cooked according to package directions and drained
- 4 oz Asiago cheese grated

Instructions
- In a large, heavy nonstick skillet over medium heat, sauté turkey sausage and eggplant for 12–15 minutes or until sausage is no longer pink and eggplant is soft and lightly browned. Add spaghetti sauce to turkey mixture and simmer 3 minutes or until heated throughout.
- To serve, spoon sauce over drained penne and top with Asiago cheese.
