“These are my son-in-law’s favorite and I promise him a batch all to himself every Christmas. A buckeye is a small, shiny, dark brown nut with a light tan patch. They come from a buckeye tree. They also resemble the eye of a deer and are believed to bring one good luck. Enjoy!”

- 1-1/2 cups creamy peanut butter
- 1 cup butter room temperature
- 1/2 tsp vanilla extract
- 4 cups powdered sugar
- 4 cups semisweet chocolate chips
- 1/4 cup vegetable shortening
- Box of toothpicks

Instructions
- Line a cookie sheet with parchment or wax paper.
- In a large bowl, stir together the peanut butter, butter, and vanilla. Add the powdered sugar a little bit at a time until completely incorporated.
- Roll the peanut butter mixture into 1-inch balls.
- Place on cookie sheet and insert a toothpick into the top of each ball.
- Chill in freezer until hard, approx. 30 minutes.
- Combine chocolate chips and shortening and cook in microwave until melted, watching closely and stirring frequently.
- Dip the balls into melted chocolate, using the toothpicks as “handles.” Leave a small circle exposed at the top of each ball.
- Place balls back onto the cookie sheet and refrigerate until the chocolate is set, approx. 2 hours.
- Remove the toothpicks and use your finger to smudge chocolate over the holes where the toothpicks were.
- Store buckeyes in an airtight container between layers of waxed paper for up to 1 month.
