Ingredients
- 1-1/4 lbs pork loin sirloin chops or pork shoulder blade steaks
- 2 tsp oregano
- 2 tsp ground cumin
- 2 Tbsp olive oil
- 1 medium onion cut into narrow wedges
- 1 14.5 oz can Italian recipe stewed tomatoes
- 9 oz fresh linguini or fettuccini pasta
- Parmesan cheese
- Italian herbs

Instructions
- Trim off fat from the chops or blade steaks. Trim the meat from bones and cut into small cubes; dust pork with oregano and cumin. Heat oil in large skillet over medium-high heat. Add onion and pork and sauté until cooked through, about 8 minutes; add tomatoes and heat.
- Cook fresh linguine in boiling water approx. 2 minutes or as package directs. Drain and serve with pork/onion sauce on top; sprinkle with cheese and herbs.
