Instructions
  1. In a large saucepan, combine rhubarb and 1 cup sugar. Cook over medium heat for 12–15 minutes or until rhubarb is tender.
  2. In a small bowl, cream shortening and remaining 1/2 cup sugar; beat in egg and vanilla.
  3. In a separate bowl, combine the flour, baking powder, and salt; add to creamed mixture alternately with the milk. Beat until just combined.
  4. Pour batter into a greased 9-inch square baking dish.
  5. Pour rhubarb mixture over the batter.
  6. Bake at 350 degrees for 30–35 minutes.
