Preheat oven to 375 degrees. On a lightly floured surface, roll out dough to scant 1/4-inch thickness. Cut into 4-inch rounds, re-rolling scraps once, to make 18 rounds. Transfer rounds to parchment paper-lined baking sheet, approx. 1 inch apart. Place a heaping tablespoonful of filling onto one half of each round, leaving a border all around.
