Ingredients
Cake
- 3/4 cup Butter or margarine
- 1-1/2 cups sugar
- 3 eggs separated
- 3 cups sifted cake flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup red maraschino cherries (about 16 cherries) drained and chopped
- 1/2 cup chopped pecans
- 1/4 tsp almond flavoring
7-Minute Frosting
- 2 egg whites unbeaten
- 1-1/2 cups sugar
- 1/8 tsp salt
- 1/3 cup cold water
- 1 Tbsp light corn syrup
- 1 tsp vanilla

- 1/4 cup butter or margarine
- 2 cups sifted confectioners’ sugar
- 1/8 tsp salt
- 3 tbsp cream
- 1 tsp vanilla

Instructions
Cake
- Cream butter or margarine, add sugar gradually and cream well together.
- Add egg yolks and beat thoroughly.
- Sift flour, baking powder, and salt together and add to creamed mixture alternately with milk, beginning and ending with dry ingredients.
- Add well-drained maraschino cherries, nuts, and almond flavoring.
- Beat egg whites until stiff but not dry.
- With a rubber spatula or a spoon, fold in the egg whites with an ‘up-and-over’ motion.
- Grease two 9-inch cake pans and divide batter evenly into each.
- Bake in oven at 375 degrees for 20 minutes or until inserted toothpick comes out clean.
- Cool on racks until pans are cool enough to handle.
- Turn out on racks and cool before frosting.
- Frost with either 7-Minute or Butter Frosting.
- Decorate with red maraschino cherries and green spearmint leaf gumdrops.
7-minute Frosting
- Place egg whites, sugar, salt, water, and corn syrup in top of double boiler.
- Place over boiling water and heat constantly with a large double rotary beater or electric mixer at high speed until frosting will stand in peaks, about 7 minutes.
- Remove from heat; beat in vanilla.
- Quickly spread on cake.
Butter Frosting
- Cream butter (or margarine) until soft.
- Slowly stir in 1 cup sugar and salt.
- Add additional sugar alternately with cream, beating thoroughly after each addition until creamy and smooth.
- Beat in vanilla.
- Additional cream may be added to give frosting spreading consistency.
