Ingredients
- 1 lb cauliflower cut into bite-sized pieces, about 1 head
- 4 oz cream cheese softened
- 1/4 cup sour cream
- 3/4 cup cheddar cheese shredded
- 3/4 cup Monterey jack cheese shredded
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 3 slices bacon fried crispy and crumbled
- 1/4 cup chopped chives plus extra for topping
- Salt and pepper to taste

Instructions
- Steam cauliflower pieces for approx. 10 minutes. Place all ingredients into a large bowl and mix thoroughly.
- Heat oven to 425 degrees. Grease an 8-x8-inch baking dish and spread cauliflower mixture into it evenly. Bake for 20–25 minutes until fork-tender.
Recipe Notes
NOTES: As a side dish, this serves 4–5 easily. Add some cubed, cooked ham and you have a main dish for 4 people
