Jeannette’s Potato Pancakes
all purpose flour
Mix eggs, salt, baking powder, potatoes, and milk into a blender.
Puree until smooth. Add flour to make a thin batter.
Heat a frypan on medium and add vegetable oil to pan.
Once oil is hot, pour 1/3 cup batter into frypan.
When the bottom of pancake is brown, turn and brown the other side.
Cook remaining 2/3 of batter in 2 separate batches.
Add additional oil between batches.
