Jeannette’s Potato Pancakes
  1. Mix eggs, salt, baking powder, potatoes, and milk into a blender.
  2. Puree until smooth. Add flour to make a thin batter.
  3. Heat a frypan on medium and add vegetable oil to pan.
  4. Once oil is hot, pour 1/3 cup batter into frypan.
  5. When the bottom of pancake is brown, turn and brown the other side.
  6. Cook remaining 2/3 of batter in 2 separate batches.
  7. Add additional oil between batches.
