- 2 large eggs
- 1 tsp salt
- 1 tsp baking powder
- 3 medium potatoes diced
- 3 milk
- 1/3 cup all purpose flour
- 2 Tbsp vegetable oil

Instructions
- Mix eggs, salt, baking powder, potatoes, and milk into a blender.
- Puree until smooth. Add flour to make a thin batter.
- Heat a frypan on medium and add vegetable oil to pan.
- Once oil is hot, pour 1/3 cup batter into frypan.
- When the bottom of pancake is brown, turn and brown the other side.
- Cook remaining 2/3 of batter in 2 separate batches.
- Add additional oil between batches.
