I remember having potato pancakes a lot as I was growing up.

Ingredients
Instructions
  1. Put first five ingredients into a blender and puree until smooth. Add enough flour to make a thin batter.
  2. Add about two tablespoons of vegetable oil to a frying pan on medium heat.
  3. Pour approx. 1/3 cup batter into the frying pan once the oil is hot. When the bottom of the pancake is brown, turn and brown the other side. Add additional oil between batches.
