Ingredients
- 2 large eggs
- 1 tsp salt
- 1 tsp baking powder
- 3 medium potatoes chopped, (approx. 3 cups)
- 3 Tbsp milk
- 1/3 cup all purpose flour
- Vegetable oil for fryng

Instructions
- Put first five ingredients into a blender and puree until smooth. Add enough flour to make a thin batter.
- Add about two tablespoons of vegetable oil to a frying pan on medium heat.
- Pour approx. 1/3 cup batter into the frying pan once the oil is hot. When the bottom of the pancake is brown, turn and brown the other side. Add additional oil between batches.
