Ingredients
- 1 lb ground beef
- 1 medium onion chopped
- 2 oz cans stewed tomatoes 14-1/2each
- 4 medium carrots thinly sliced 2 celery ribs, thinly sliced
- 1 cups medium potato peeled and cubed 1-1/2water
- 1/4 cup long grain rice uncooked 1 Tbsp salt
- 1/8 tsp pepper

Instructions
- Cook beef and onions over medium heat until meat is no longer pink; drain.
- Add tomatoes, carrots, celery, potato, water, rice, salt, and pepper; bring to a boil.
- Reduce heat; cover and simmer for 30 minutes, or until vegetables and nice are tender.
- Uncover; simmer 30 minutes longer or until thickened.
