Instructions
  1. Drain beets, reserving 1/2 cup liquid. In a bowl, combine beets with sliced onion.
  2. In a saucepan, mix together reserved beet liquid, vinegar, sugar, water, and salt. In a cheesecloth or muslin bag, tie together cloves, cinnamon stick, and mustard seed; add to beet mixture. Simmer covered for 10 minutes. Discard spices. Pour liquid over beets, cover with plastic wrap, let cool, and refrigerate.
