Fresh Cranberry-Apple Salad
  1. Heat water to boiling and pour over gelatin; stir until dissolved and cool slightly.
  2. Stir in orange juice and chill until mixture is syrupy.
  3. While gelatin is cooling, run cranberries and orange rind through a food processor using a fine blade.
  4. Core unpeeled apples and cut into small pieces.
  5. Combine all remaining ingredients with gelatin that has been chilled.
  6. Refrigerate until gelatin is set.
