Creamy Mushroom Pork
  1. Cut pork into eight 1-inch thick pieces.
  2. Season pork with salt and pepper over both sides.
  3. In a large skillet over medium heat, cook pork in vegetable oil for 2–3 minutes on each side or until browned.
  4. Reduce heat to medium-low, add broth and mushrooms; simmer for 5 minutes.
  5. Remove pork from skillet; whisk in cream cheese, mustard, and Gouda cheese until melted.
  6. Return pork to skillet and add green onions; simmer until pork is tender.
