Ingredients
- 1 lb pork tenderloin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 Tbsp vegetable oil
- 1/2 cup chicken broth
- 8 oz sliced mushrooms
- 1/2 cup whipped cream cheese
- 1 tsp Dijon mustard
- 2 oz Gouda cheese shredded
- 1/2 cup green onions diced

Instructions
- Cut pork into eight 1-inch thick pieces.
- Season pork with salt and pepper over both sides.
- In a large skillet over medium heat, cook pork in vegetable oil for 2–3 minutes on each side or until browned.
- Reduce heat to medium-low, add broth and mushrooms; simmer for 5 minutes.
- Remove pork from skillet; whisk in cream cheese, mustard, and Gouda cheese until melted.
- Return pork to skillet and add green onions; simmer until pork is tender.
