Crust
  1. Cut butter (or mix by hands) into flour; add salt and mix well.
  2. Press into a 9-inch pie plate.
Filling
  1. Put peaches in bowl and sprinkle with 1/4 cup sugar. Let stand.
  2. Combine 3/4 cup sugar, flour, egg, and vanilla. Fold in sour cream; stir in peaches.
  3. Pour mixture into crust and bake at 400 degrees for 15 minutes, then at 350 degrees for 20 minutes.
Topping
  1. Combine sugar, butter, flour, and cinnamon until crumbly. Sprinkle over top of pie.
  2. Bake at 400 degrees for 10 more minutes.
