Carrot Cupcakes
Here is a very good cupcake recipe. It was in a very old either McNess or Watkins recipe book. I have used it for over 60 years. Each time I make them I get so many compliments!

  1. Beat all ingredients together in a bowl until well blended; set aside.
Carrot Cupcakes
  1. Combine all ingredients in mixing bowl and beat at medium speed for 2 minutes.
  2. Fill prepared muffin tins half full.
  3. Bake at 375 degrees for 20–25 minutes.
  4. Frost with prepared frosting when muffins have cooled.
