Ingredients
Cake
- 2 cups flour
- 2 tsp baking soda
- 3 eggs
- 3/4 cup oil
- 3/4 cup buttermilk
- 2 cups sugar
- 2 tsp vanilla
- 2 tsp cinnamon
- 1/2 tsp salt
- 2 cups carrots grated
- 1 8.25 oz can crushed pineapple drained
- 3 oz shredded coconut
- 1 cup nuts chopped
Orange Sauce
- 1 cup sugar
- 10 oz frozen orange juice concentrate

Instructions
Cake
- Sift flour and baking soda.
- Beat together eggs, oil, buttermilk, sugar, and vanilla. Mix well and add flour and baking soda mixture, cinnamon, salt, carrots, pineapple, coconut, and nuts until well blended.
- Pour into a greased and floured 9-x-13-inch pan. Bake at 350 degrees for 55 minutes.
Orange Sauce
- Combine sugar and orange juice concentrate.
- Bring to a boil and pour over warm cake.
- Let sit at least 3 hours or overnight
