Ingredients
- 1-1/2 lbs fish fillets of choice
- 1 tsp salt
- 1/2 tsp black pepper
- 1 medium onion sliced
- 1/2 green pepper chopped
- 1 4 oz can mushrooms drained (or fresh)
- 3 Tbsp butter
- 1 16 oz can tomatoes drained
- 1/2 tsp paprika
- 1/4 tsp red pepper
- 3–4 dashes hot sauce of choice or to taste

Instructions
- Pat fish fillets dry, sprinkle with salt and pepper on both sides, and arrange in a greased, shallow baking dish. In a skillet, cook onions, peppers, and mushrooms in butter. Add tomatoes, spices, and hot sauce, and bring to a simmer. Adjust seasonings if necessary. Pour over fish and bake in a 375-degree oven until fish flakes with a fork.
