Instructions
Lemon Vinaigrette
  1. In a large bowl, whisk together oil, lemon juice, mustard, honey, salt, and pepper. Stir in shallot.

  1. In a large salad bowl, toss shrimp, blueberries, walnut pieces, cooked edamame (or peas), and salad greens.
  2. Evenly divide salad onto six plates. Drizzle with lemon vinaigrette; sprinkle cheese around edges of salads and serve.
Recipe Notes

Note: Substitute cider vinegar for lemon juice, if desired, in vinaigrette.
