Ingredients
- 1/2 cup salt
- 3 cups water divided
- 2-3 fish fillets 1-1/2 lbs
- 4 cups vinegar divided
- 1–2 large onions sliced
- 1 cup sugar
- 1 cup port wine
- 1 Tbsp pickling spices

Instructions
- Mix salt and 2 cups water together to make brine.
- Soak fish in salt brine for at least 24 hours.
- Drain and soak fish in 2 cups white vinegar for a further 24 hours; drain.
- Place fish in containers with layer of fish, layer of onions.
- In a saucepan, combine sugar, port wine, 1 remaining cup of water, 2 remaining cups of vinegar, and pickling spices; boil and allow to cool.
- Pour mixture over fish and onions.
- Refrigerate for approx. 1 month. Enjoy!
