Crab Cakes

Ingredients
- 2 Tbsp olive oil divided
- 3/4 cup sweet onion finely diced
- 1 Tbsp minced garlic
- 3 cups crabmeat canned or fresh
- 2 large baked potatoes peeled and mashed with fork
- 2 Tbsp dill pickle relish
- 2 Tbsp Old Bay seafood seasoning
- 1/2 cup mayonnaise
- 1 tsp salt
- 1/2 tsp pepper

Instructions
- Preheat oven to 375 degrees.
- In a medium skillet on medium heat, heat 1 tablespoon of olive oil; sauté onion and garlic until soft (approx. five minutes).
- In a large mixing bowl, combine crab, potato, relish, seafood seasoning, mayonnaise, salt, pepper, and onion and garlic mix.
- Form into 24 crab cakes.
- Place crab cakes on nonstick or lightly sprayed baking paper and drizzle with remaining olive oil.
- Bake approx. 15 minutes or until they are lightly brown.
