Instructions
Bottom Layer:
  1. Preheat oven to 350 degrees.
  2. Combine crackers, sugar, and butter; place in bottom of 9x13-inch oven-safe dish.
Second Layer:
  1. Combine eggs, sugar, and cream cheese.
  2. Pour over graham cracker crust.
  3. Bake for 20 minutes.
Third Layer:
  1. Soak gelatin in water.
  2. Mix together pumpkin, egg yolks, 1/2 cup sugar, milk, salt, and cinnamon.
  3. Cook in a double boiler until thick;
  4. remove from heat and add gelatin mixture. Cool.
  5. Beat egg whites and remaining 1/4 cup sugar, fold into cooled custard.
  6. Pour over baked crust and top with whipped cream.
