$5 Supper (in the 1980’s)
I call this recipe my $5 Supper as that’s about what it cost when I first made it back in the early 80’s, and I am still making it today. It serves a family of 4 with a salad and garlic bread.

Instructions
  1. Sauté the onion, peppers, celery, and mushrooms in a tablespoon of olive oil until slightly soft. Remove from heat and transfer to a 5-quart casserole dish.
  2. Add a tablespoon of olive oil to the same pan and add the pork pieces with a little salt and pepper, and coat the pork with paprika as you fry it. Cook until no longer pink in the center.
  3. Add the cooked pork pieces to the casserole dish and mix with the vegetables.
  4. Stir in spaghetti sauce, oregano, basil, and thyme. Cover the mixture with parmesan cheese and bake covered for 45 minutes.
  5. Serve over spaghetti or rice.
