  1. Preheat oven to 325 degrees. Mix flour, sugar, baking powder, and salt. Beat in oil, egg yolks, and water with a spoon until smooth. In a separate bowl, beat egg whites and cream of tartar until stiff peaks appear. Pour egg yolk mixture gradually over the egg whites; folding just until blended. Pour into ungreased 10x4-inch tube pan. Bake 75 minutes or until top springs back. Invert pan on funnel until cake is cool.

  1. In a one-gallon jar, place dill in bottom of jar.
  2. Slice cucumbers lengthwise and pack in jar with onions and garlic and place additional dill on top.
  3. In saucepan, boil together vinegar, sugar, water, and pickling salt.
  4. Pour hot mixture over cucumbers.
  5. Let stand at room temperature for 24 hours; then refrigerate.
  6. Pickles will keep for at least 2–3 months, if refrigerated.

  1. In the bottom of a 1-gallon jar, place 1 head of dill, about 1/3 of the chopped onions, and 2 cloves garlic.
  2. Add cucumbers to fill jar halfway. Top with another head of dill, 1/3 of the chopped onions, and two more garlic cloves.
  3. Finish filling the jar with cucumbers and top with the remaining dill, onions, and garlic.
  4. To make brine, mix water, vinegar, sugar, and pickling salt, bring to a boil, cook 1 minute, and cool.
  5. Pour brine, hot or cold, over cucumbers to fill jar.
  6. Cover and let stand at room temperature for 24 hours, then refrigerate.

  1. Preheat oven to 375 degrees. In a large bowl, combine ground pork, onion flakes, corn flakes, salt, pepper, and egg. In a small bowl stir together ketchup, brown sugar, and dry mustard. Spoon 2 tablespoons of the ketchup mixture into the pork and mix well. Spray muffin tin with vegetable cooking spray. Form 6 meatballs and place in muffin tin. Coat the top of each meatball with the remaining ketchup mixture. Bake for 30 minutes until nicely glazed and internal temperature is 160 degrees.

  1. Preheat oven to 350 degrees. With an electric mixer with whisk attachment, whip ricotta and cream cheese until smooth. Stir in orange zest.
SYRUP
  1. In a small bowl, whisk honey, orange juice, and cinnamon. Add 3 tablespoons of honey mixture to ricotta mixture and stir. Reserve remaining amount for topping.
FRENCH TOAST
  1. In a shallow wide bowl, whisk together eggs, milk, vanilla and salt. Place bread in bowl to absorb batter. Spread almonds out on a plate. Heat a skillet over medium heat and melt half the butter. Dip half the bread slices in the almonds, pressing them into the side. Place the bread in the melted butter and grill until browned, about 2–3 minutes on each side. Put finished bread on an ungreased baking sheet. Melt remaining 1-1/2 tablespoons of butter and repeat with remaining bread slices. Bake the grilled bread in the oven for 8–10 minutes, or until cooked through. If desired, heat honey mixture on stove top or in microwave. Serve French toast slices with a dollop of ricotta and remaining honey mixture.

  1. Preheat oven to 350 degrees.
  2. Mix 2 tablespoons butter, 2 tablespoons flour, and 1 cup sugar; set aside.
  3. Beat remaining 1/2 cup sugar with remaining 1 tablespoon butter; then beat in egg.
  4. Sift remaining 2 cups flour together with baking powder and salt.
  5. Add alternately, milk, flour mixture, milk to sugar mixture.
  6. Place batter in 13x9-inch greased and floured pan.
  7. Arrange apples over the batter in one layer. Sprinkle sugar streusel over top of apples.
  8. Sprinkle cinnamon and/or nutmeg over dish, to taste.
  9. Bake for 25–30 minutes, test with toothpick in an area without fruit on top.
Recipe Notes

Additional notes: You can add 1 teaspoon vanilla or 1/2 teaspoon almond/orange flavoring to batter. You can use many different kinds of fruit with this recipe.

  1. Heat 2 parts honey to 1 part hot water in a saucepan over medium-low heat until the mixture reaches a simmer.
  2. Remove from heat and cool.
  3. Store at room temperature or refrigerate as desired. Lasts 4 weeks in the refrigerator.
Beverage
  1. Combine ingredients in blender.
  2. Blend until smooth and garnish with a light cinnamon sprinkle.
Recipe Notes

TIP: While the simple syrup mixture is simmering, infuse it with herbs, spices, citrus peels, or other aromatics. (Rosemary, grapefruit peel, peppercorn, pomegranate seeds, and vanilla bean are just some of the possibilities.) Cool and strain the infused syrups before using.
