Boiled Peanut & Red Pepper Hummus
roasted red peppers
drained, 12 oz
Optional ingredients: chopped parsley, minced jalapeño, and ground cumin
In a food processor, purée garlic with lemon juice until finely chopped.
Add peppers and peanuts, process until smooth; if required, add salt, pepper, and water.
Scoop mixture into a bowl and add Tahini, stir well; add oil and water for texture; salt and pepper to taste.
Transfer hummus to serving platter.
If desired, top with parsley, jalapeño, and cumin.
Makes 16 servings.
