  1. In a food processor, purée garlic with lemon juice until finely chopped.
  2. Add peppers and peanuts, process until smooth; if required, add salt, pepper, and water.
  3. Scoop mixture into a bowl and add Tahini, stir well; add oil and water for texture; salt and pepper to taste.
  4. Transfer hummus to serving platter.
  5. If desired, top with parsley, jalapeño, and cumin.
  6. Makes 16 servings.
