Best Ever Pickled Fish
Mix salt and 2 cups water together to make brine.
Soak fish in salt brine for at least 24 hours.
Drain and soak fish in 2 cups white vinegar for a further 24 hours; drain.
Place fish in containers with layer of fish, layer of onions.
In a saucepan, combine sugar, port wine, 1 remaining cup of water, 2 remaining cups of vinegar, and pickling spices; boil and allow to cool.
Pour mixture over fish and onions.
Refrigerate for approx. 1 month. Enjoy!
